Text Box Tool
The text box tool in Acrobat 7 and earlier black text. However, in 8.0
I am getting red text, which I don't want and don't know how to change
it. Is anyone else getting red text?

Make a text box. Move over the edge of the box, then click to see the blue bounding box handles. Control/right-click and select Properties. In the Properties dialog, change the border color and check the Make Properties Default checkbox, then click OK.

Steve,
I did that before posting. It doesn't seem to give me the option of
changing the text color :-(
The documentation only shows the text as color red. With all sorts of
people having trouble with the color red, I'm surprised that was made
the default and only choice.

Use the Properties Bar (see menu entry "View/Toolbars/Property Bar", or use Cmd-E). Select the text in the Textbox annotation, format to your taste (color, font, size, alignment, and a few more) with the help of the Properties Bar.
(Tested in Acrobat 8 Professional on Mac OS X.)

Good tip, Olaf.
With the Properties Bar still open, if you click back on the edge of the text box, you'll see the box properties (border, etc.) on the Properties Bar. You can click the More button on the right to take you to the Text Box Properties dialog, and check Make Properties Default.
