Re: Trashing PREVIEW?
This function is actually controlled by the OS and not InDesign.
Select a file that you want to open in the Finder. Get Info on the selected file and from info box that appears select the option named 'Open with', from the pull down menu, change the default application to PhotoShop, click OK.
This should now inform the OS to open all files, like the one you just selected with PhotoShop.

Re: Trashing PREVIEW?
It actually has nothing to do with InDesign. You need to change your default application for whatever file type you're trying to open. In the Finder, Control/right-click on the image file, choose File > Get Info. On the Open With panel select Photoshop, and click Change All.

Re: Trashing PREVIEW?
What it has to do for the most part is in the type of file you are trying to open, or edit. Any image, in any format, that does not have an specific applicaitons attached, or tag, to it will launch Preview. If your images have been saved with a Photoshop tag, they will open with Photoshop, or the tag assigned to the file you are trying to edit.
