Trim Text Along a Path
I am trying to take a single letter that needs to be trimmed to fit within a circle. Essentially I want to replicate this image that I did in Photoshop:

I tried creating outlines and editing the paths of the letter but getting it to fit perfectly has proven to be quite difficult.
Any shortcuts to trim the object within another path (the circle)in AI 10?

Use a clipping mask; full instructions in Help>Clipping masks.

Another option would have been to use the pathfinder pallet (divide perhaps). If I was sending it out to be printed, I'd probably go that route.
For the quickest and easiest, Jacob's suggestion is probably the best.
