Use the pen tool to draw a line. No underling in Illustrator.

Actually, there is a way to underline. Select the type w type tool, go to the Character palette (not Character Style), select the well-hidden T with an underscore beneath it (lower left side of the FULLY expanded Character palette). I'm using the CS4 version....so not sure how this translates.
