You can create any web page you want and insert any of the PS 'tokens' in them, or you can start with an existing template and customize it. Just copy and existing set of files in PS> Presets> Web Photo Gallery and whack away. DW is a good tool for doing this.
There are very good instructions on all this in PS Help - always a good place to start!
