Options key, more commonly known as the Option key. Look on your Macintosh keyboard, the Option key will have the word 'Option' printed on it.

Or she is talking about the options key on the palettes--if you are looking for the palette based options key go to the right hand side of the palette on the top and you will notice a cirle with a triangle in it, click on that and it will open up the palette's options
